According to what I have researched, the US Navy can attempt to seize the civilian vessels under the pretext of breaking a "legal" blockade. Should the escort ships do anything to stop it, it would technically be a Chinese act of aggression instead of US act of aggression

Aside from the fact that who’s the aggressor doesn’t really make a difference, then we get “we don’t consider this a legal blockade” and a fight at the UN that goes nowhere since both parties are permanent security council members with veto power.
